Pecan-Orange French Toast
- 4 eggs, lightly beaten
- 1/4 cup orange juice concentrate
- 1/2 cup milk
- 1/2 cup finely ground pecans
- 1/2 teaspoon vanilla
- 1/8 teaspoon cinnamon
- Pinch of nutmeg
- Ten 1-inch-thick slices of french bread
- Unsalted butter
- Maple syrup
- Powdered sugar
- Four cooked sausage links
- In a shallow bowl beat together eggs, orange juice concentrate, milk, pecans, vanilla, cinnamon and nutmeg.
- Dip bread into egg mixture, coating both sides.
- (soak for 30 seconds on each side).
- In a skillet melt 1 tablespoon butter and cook the bread on both sides over medium heat for 2-3 minutes on each side or until golden.
- Serve with butter, syrup, powdered sugar and sausage.
