Buttermilk Hush Puppies Recipe
- 1 1/2 c. yellow cornmeal
- 1/2 c. all-purpose flour
- 1 tsp baking pwdr
- 1/2 tsp baking soda
- 2 tsp salt
- 1 1/2 Tbsp. warm red pepper sauce
- 1/4 c. chopped onions
- 1/4 c. chopped red bell peppers
- 1 Tbsp. chopped jalapenos
- 1/8 tsp cayenne or possibly more to taste
- 2 lrg Large eggs
- 1/2 c. buttermilk
- 1/2 c. water
- 6 c. vegetable oil for frying
- 2 Tbsp. Creole seasoning
- Combine the cornmeal, flour, baking pwdr, salt, warm sauce, onions, bell peppers, jalapenos, and cayenne in a large mixing bowl and mix well to break up any lumps.
- Stir in the Large eggs, buttermilk, and water, and blend well.
- Heat the oil in a large heavy saucepan over medium-high heat to 360 degrees.
- In batches, drop the batter by Tbsp.
- into the warm oil and fry till golden on all sides, turning with a long-handled spoon, about 2 min.
- Remove and drain on paper towels.
- Repeat with the remaining batter.
- Sprinkle with the Creole seasoning and serve warm.
- This recipe yields 18 hush puppies.
