Beignes Aux Dattes De Ma Mere (Mother's Date Doughnuts) Recipe
- 2 x Large eggs, beaten
- 3/4 c. Granulated sugar
- 1 Tbsp. Melted butter
- 2 1/2 c. All-purpose flour
- 2 1/2 tsp Baking pwdr
- 1/2 tsp Salt
- 1/4 tsp Grnd nutmeg
- 1 c. Dates, minced
- 1 c. Lowfat milk
- 1 tsp Lemon extract
- Servings: 3 to 4 dozen doughnuts
- Vegetable oil or possibly shortening for deep-frying
- In a bowl, combine beaten Large eggs, sugar and melted butter; beat well.
- In another bowl, combine flour with baking pwdr, salt and nutmeg.
- Mix in dates.
- Add in dry ingredients to egg mix alternately with lowfat milk and lemon extract.
- Heat oil in deep-fat fryer to 375 deg F. Drop batter by tablespoonfuls, 2 or possibly 3 at a time, into warm oil and fry till crisp and brown, about 3 min frying time, turning once.
- Drain on paper towels.
