Tex-Mex Stuffed Peppers

  1. Preheat your oven to 350 F. Spray a baking dish (one that is big enough to fit all of your pepper halves) with cooking spray or grease with some olive oil.
  2. Line up the pepper halves in your prepared pan.
  3. Set aside.
  4. In a large pan over medium heat, saute your onions until soft and fragrant.
  5. Add your garlic and cook 1-2 minutes on medium-low.
  6. Turn up the heat to medium-high and add your ground turkey.
  7. Cook until turkey is no longer pink.
  8. Add your taco seasoning, cayenne pepper, diced tomatoes, corn, chilies and beans.
  9. Let this simmer for about 5 minutes.
  10. Add your rice, sour cream or yogurt and cilantro.
  11. Taste and adjust seasoning.
  12. Add a little salt and pepper, perhaps?
  13. Turn off the heat and spoon your turkey mixture into your prepared peppers.
  14. I like mine filled with plenty of meat and veggie mixture.
  15. You may prefer more peppers and less filling.
  16. Your choice.
  17. Bake in your preheated oven for about 45 minutes.
  18. Remove from oven and sprinkle your cheese over each pepper.
  19. Return to your oven and bake for another 5 minutes until cheese is nicely melted.
  20. Serve with a spoonful of sour cream and a sprinkle of cilantro.
