Tex-Mex Stuffed Peppers
- 6 whole Sweet Peppers (red, Yellow Or Orange) Cut In Half With Seeds Removed
- 1 whole Medium Onion, Chopped
- 2 cloves Garlic, Finely Chopped
- 1 pound Ground Turkey (or Ground Beef Or Chicken)
- 1 envelope Low Sodium Taco Seasoning, 1 Ounce Packet
- 1/4 teaspoons Cayenne Pepper (optional; More Or Less To Taste)
- 1 can (15-ounce) Can Diced Tomatoes
- 1 can (8 1/2 Oz. Size) Corn, Drained
- 1 can (7 Oz. Size) Diced Green Chilies, Not Drained (Mild Or Hot)
- 1 can (15 Oz. Size) Black Beans, Drained And Well Rinsed
- 1 cup Cooked Rice (brown, White, Wild Or Even Quinoa)
- 1 cup Sour Cream Or Plain Greek Yogurt, Plus More For Serving
- 1 cup Fresh Cilantro, Plus More For Serving
- 1- 1/2 cup Mexican Blend Shredded Cheese
- Preheat your oven to 350 F. Spray a baking dish (one that is big enough to fit all of your pepper halves) with cooking spray or grease with some olive oil.
- Line up the pepper halves in your prepared pan.
- Set aside.
- In a large pan over medium heat, saute your onions until soft and fragrant.
- Add your garlic and cook 1-2 minutes on medium-low.
- Turn up the heat to medium-high and add your ground turkey.
- Cook until turkey is no longer pink.
- Add your taco seasoning, cayenne pepper, diced tomatoes, corn, chilies and beans.
- Let this simmer for about 5 minutes.
- Add your rice, sour cream or yogurt and cilantro.
- Taste and adjust seasoning.
- Add a little salt and pepper, perhaps?
- Turn off the heat and spoon your turkey mixture into your prepared peppers.
- I like mine filled with plenty of meat and veggie mixture.
- You may prefer more peppers and less filling.
- Your choice.
- Bake in your preheated oven for about 45 minutes.
- Remove from oven and sprinkle your cheese over each pepper.
- Return to your oven and bake for another 5 minutes until cheese is nicely melted.
- Serve with a spoonful of sour cream and a sprinkle of cilantro.
