Spinach Lasagne Rolls

  1. Preheat oven to 350u0b0.
  2. Heat oil in skillet over medium heat. Add spinach and cook until tender, 4 minutes.
  3. Cool.
  4. Combine spinach, Ricotta, Parmesan, egg and parsley in a large bowl.
  5. Add salt and pepper.
  6. Spread 1 cup spaghetti sauce in bottom of an 8-inch dish.
  7. Put 1 lasagne noodle (dry) on wax paper sheet. Spread 1/3 cup Ricotta mixture over noodle.
  8. Roll up noodle.
  9. Place seam, side down, in dish.
  10. Repeat with all noodles.
  11. Top with 1 cup sauce.
  12. Sprinkle with Mozzarella.
  13. Bake about 45 minutes, until cheese melts.
