Carol's Hot Chicken Salad
- 2 cups chopped cooked chicken
- 1 cup diced celery
- 12 cup slivered almonds
- 1 tablespoon lemon juice
- 3 hard-boiled eggs, chopped
- 1 (10 3/4 ounce) can cream of mushroom soup
- 12 onion, minced
- 12 teaspoon salt
- 14 teaspoon pepper
- 12 cup mayonnaise
- 2 cups Ritz cracker crumbs
- Combine all of the ingredients, except for the crackers, in a greased casserole dish.
- Top with crushed Ritz crackers.
- Bake for 20 minutes at 350 degrees.
