Saraosta's ... Favorite Creamy Rice and Peas
- 3 cups cooked white rice
- 1 cup baby peas
- 2 shallots, very fine diced
- 34 cup heavy cream (more of less depending on how creamy you want the rice)
- 14 cup pecorino romano cheese
- 2 teaspoons minced fresh thyme
- salt
- pepper
- pecorino romano cheese (optional)
- Rice -- Use whatever method you want and whatever type of rice you want for this dish - that is not what is important.
- You want around 3 cups.
- A little more is fine, this isn't an exact recipe.
- Sauce -- As the rice cooks, heat up the cream, shallot, and cheese in a small bowl or measuring cup in the microwave for just 1 minute on medium heat.
- Finish -- Add the warm sauce to the cooked rice along with the fresh thyme, salt and pepper.
- Mix well to combine.
- If you want it a bit creamier, add more cream.
- NOTE: I just like to heat the cream first, just a few seconds in the microwave, so it is warm when I add it to the rice.
- Serve -- Garnish with a little cheese if you want and serve.
- It goes with just about anything.
