Cinnamon Cuke Rings

  1. Peel, core and slice cukes.
  2. Put in solution for 24 hours. Lift rings out of water, wash and drain well.
  3. Do this 3 times. Add the 1 cup vinegar, alum and enough water to cover rings.
  4. Add food coloring.
  5. Heat and simmer for 2 hours.
  6. Lift rings out of solution.
  7. Discard solution.
  8. Make syrup with 6 cups water, sugar, red hot candy, 6 cups vinegar and cinnamon sticks.
  9. Bring to a boil.
  10. Pour over cuke rings.
  11. Cover.
  12. Let set overnight.
  13. Drain syrup.
  14. Reheat.
  15. Pour over rings.
  16. Let set overnight again.
  17. Do this for 3 days.
  18. On the third day, heat to boiling.
  19. Pack in jars and seal.
