Hearty Pasta Salad Recipe

  1. Cook pasta "al dente", drain and cold.
  2. Cut artichoke hearts into bite size pcs.
  3. Combine pasta, artichokes, onions and ripe olives in a large bowl.
  4. Add in pepperoni slices.
  5. Mix vinegar, artichoke liquid and salad dressing.
  6. Pour over pasta mix, stir in 3/4 c. of Parmesan cheese.
  7. Add in salt and pepper and stir well.
  8. Sprinkle with extra cheese.
  9. Prepare salad one day in advance.
  10. Serves 12 to 14.
