Lemon-Basil Quinoa

  1. Rinse quinoa in mesh strainer; drain.
  2. Add to small saucepan with water; bring to boil.
  3. Cover; simmer on low heat 15 min.
  4. Remove from heat.
  5. Let stand 5 min.
  6. Spoon into large bowl.
  7. Refrigerate 1 hour.
  8. Mix mayo, dressing and lemon juice until blended.
  9. Fluff quinoa with fork.
  10. Add mayo mixture and remaining ingredients; mix lightly.
