Lemon-Basil Quinoa
- 3/4 cup quinoa, uncooked
- 1-1/2 cups water
- 1/2 cup KRAFT Mayo with Olive Oil Reduced Fat Mayonnaise
- 1/4 cup KRAFT Tuscan House Italian Dressing
- 1/4 cup fresh lemon juice Safeway 4 ct For $5.00 thru 02/09
- 2 cups cherry tomatoes, halved
- 1 cucumber, peeled, seeded and chopped
- 8 green onions, sliced
- 1/2 cup chopped fresh basil
- Rinse quinoa in mesh strainer; drain.
- Add to small saucepan with water; bring to boil.
- Cover; simmer on low heat 15 min.
- Remove from heat.
- Let stand 5 min.
- Spoon into large bowl.
- Refrigerate 1 hour.
- Mix mayo, dressing and lemon juice until blended.
- Fluff quinoa with fork.
- Add mayo mixture and remaining ingredients; mix lightly.
