Butterscotch Sugar Drops

  1. Heat oven to 350F
  2. Beat butter and sugar in large bowl until well blended.
  3. Add eggs and vanilla; beat well.
  4. Stir together flour, baking soda and salt; gradually add to butter mixture, beating until well blended.
  5. Stir in butterscotch chips and apricots.
  6. Drop by teaspoons onto ungreased cookie sheet.
  7. Bake 8 to 10 minutes or until lightly browned around edges.
  8. Cool slightly; remove from cookie sheet to wire rack.
  9. Cool completely.
