Chicken Supreme In Cantaloupe Shells Recipe
- 4 cantaloupes
- 5 c. diced, cooked chicken
- 1 teaspoon salt
- 1 teaspoon curry pwdr
- 1 can (5 ounce.) roasted, slivered almonds
- 1/4 c. minced green onions
- 1 teaspoon grated lemon rind
- 1/2 c. lemon juice
- 1 c. mayonnaise
- Halve, peel and dice 1 cantaloupe to make 1 1/2 c.. Place chicken in large bowl.
- Sprinkle with salt and curry.
- Mix well.
- Add in diced melon, almonds, onion and lemon rind.
- Pour on lemon juice.
- Mix gently.
- Cover.
- Chill to refrigeratetill serving time.
- Cut remaining 3 cantaloupes in half.
- Scrape out seeds.
- Scallop or possibly zig zag edges.
- Cover with plastic wrap and chill.
- At serving time, fold mayonnaise into chicken mix.
- Spoon into melon halves.
- Garnish with mint.
- 6 servings.
