Herb-Marinated Cheese

  1. Cut the cheese crosswise into 1/2-inch slices, and arrange the slices on a serving platter.
  2. Sprinkle the cheese slices with onion, herbs, and red pepper flakes.
  3. Drizzle with the olive oil and vinegar.
  4. Season with salt and pepper.
  5. Let sit at room temperature for about 30 minutes.
  6. Serve with sliced bread.
