Tricolor Coleslaw
- 1 carrot
- 1/2 head green cabbage
- 1/2 head red cabbage
- 1 small red onion
- 1/2 c. Parsley
- 2 tsp. kosher salt
- 1/4 c. olive oil
- 2 tbsp. red vine vinegar
- 1 tbsp. celery seed
- 1 tbsp. sugar
- In a large colander, toss together carrot, cabbage, onion, parsley, and salt.
- Set colander over a large bowl and let sit 30 minutes; press firmly to remove moisture.
- In a large bowl, whisk together oil, vinegar, celery seed, and sugar to combine, then add cabbage mixture and toss well to coat.
- Cover and chill at least 2 hours, then serve.
