Spicy Spinach with Sunflower Seeds

  1. Preheat oven to 350F.
  2. Stir together sunflower seeds, 2 tsp.
  3. oil, and 2 tsp.
  4. seasoning in small bowl.
  5. Spread on small baking sheet, and bake 5 to 7 minutes, or until light brown.
  6. Set aside.
  7. Heat remaining 2 Tbs.
  8. oil in large saucepan or Dutch oven over medium-high heat.
  9. Add remaining 1 Tbs.
  10. seasoning, and cook 30 seconds.
  11. Add spinach leaves in 3 or 4 batches, turning with tongs to wilt evenly.
  12. Let cook 1 minute, then remove pan from heat, stir in vinegar, and season with salt and pepper, if desired.
  13. Sprinkle with sunflower seeds just before serving.
