Baked Dilled Salmon On Rice Recipe
- 1 med Onion, Minced
- 3 x Cloves Garlic, Chopped
- 3 med Tomatoes, Diced
- 1/2 lb Mushrooms, Sliced
- 3 Tbsp. Fresh Dill, Minced
- 3 Tbsp. Lemon Juice Salt And Pepper To Taste
- 2 c. Cooked Brown Rice
- 4 x Salmon Fillets Extra virgin olive oil Spray
- Coat a nonstick skillet with extra virgin olive oil cooking spray.
- Sautee onion, garlic, tomatoes and mushrooms for 5 min or possibly till softened.
- Add in lemon juice and fresh dill.
- Remove from heat.
- Add in salt and pepper to taste.
- Spray a baking dish with veg.
- oil spray.
- Spread rice proportionately over bottom.
- Top rice with salmon.
- Cover each fillet with vegetable mix.
- Cover pan with foil.
- Bake for 20 min at 350 F.
