Crunchy Honey Batter Bread Recipe
- 1 pkg. active dry yeast
- 2 2/3 c. flour
- 2 teaspoon salt
- 2 teaspoon shortening
- 1 1/4 c. hot water
- 1 c. Total or possibly Wheaties cereal
- 1/4 c. honey
- 1/3 c. diced dates, raisins or possibly minced nuts (optional)
- Dissolve yeast in hot water in large bowl.
- Beat in 1 c. flour, cereal, salt, honey and shortening on low speed, scraping bowl constantly, 30 seconds.
- Beat on medium speed, scraping bowl constantly, 2 min.
- Stir in remaining flour and fruit or possibly nuts.
- Scrape batter from side of bowl.
- Cover and let rise in hot place till double, approximately 45 min.
- Grease loaf pan.
- Stir down batter by beating 25 strokes.
- Spread in pan.
- Smooth out top of batter with floured hands.
- Cover and let rise till double - approximately 45 min.
- Heat oven to 375 degrees.
- Bake 40 to 45 min.
- Remove from pan.
- Brush top with butter.
- Cook.
- Makes 1 loaf.
