Honey Cake
- 2 eggs or 1/2 cup egg substitute
- 1/4 cup agave nectar or 3/4 cup sugar
- 1/2 cup honey
- 3 tbsp vegetable oil
- 2 tsp instant decaf or regular coffee granules, dissolved in 1/2 cup warm water
- 1/3 cup frozen orange juice concentrate
- 1 3/4 cup flour
- 1 tsp baking soda
- 1/4 tsp cinnamon
- 1 * optional* dash ground cloves
- 1 **optional** dash powdered ginger
- You can use any kind of pan, but a loaf pan is probably best.
- Preheat oven to 300F.
- Grease or spray a 9 X 5 X 3 inch loaf pan with a non stick cooking spray and set aside.
- In a large bowl, mix together eggs, agave nectar, honey and oil.
- Use a mixer or beat intensely by hand.
- Mix in the coffee mix and orange juice concentrate.
- Add the flour, baking soda, cinnamon and any optional spices.
- Mix on low speed until blended.
- Increase the speed for 1 minute or if mixing by hand, increase hand beating speed a bit toward the end.
- Pour batter into the pan and bake at 300F for about 65 minutes or until a toothpick or fork comes out clean.
- Cool the cake before serving.
- It will be moist but that doesn't mean it's not done.
- You never want a honey cake to be dry.
