Honey Cake

  1. You can use any kind of pan, but a loaf pan is probably best.
  2. Preheat oven to 300F.
  3. Grease or spray a 9 X 5 X 3 inch loaf pan with a non stick cooking spray and set aside.
  4. In a large bowl, mix together eggs, agave nectar, honey and oil.
  5. Use a mixer or beat intensely by hand.
  6. Mix in the coffee mix and orange juice concentrate.
  7. Add the flour, baking soda, cinnamon and any optional spices.
  8. Mix on low speed until blended.
  9. Increase the speed for 1 minute or if mixing by hand, increase hand beating speed a bit toward the end.
  10. Pour batter into the pan and bake at 300F for about 65 minutes or until a toothpick or fork comes out clean.
  11. Cool the cake before serving.
  12. It will be moist but that doesn't mean it's not done.
  13. You never want a honey cake to be dry.
