Country-Style Potatoes Au Gratin

  1. Preheat oven to 375F.
  2. Melt margarine in medium saucepan on medium heat; blend in flour.
  3. Gradually add milk, stirring until well blended; cook and stir until sauce is thickened and begins to boil.
  4. Remove from heat.
  5. Add cheese and mustard; stir until cheese is completely melted and mixture is well blended.
  6. Arrange half of the potatoes in lightly greased 2-quart shallow baking dish; cover with layers of half each of the peppers and onions.
  7. Top with half the cheese sauce.
  8. Repeat all layers; cover.
  9. Bake 50 minutes.
  10. Remove cover; increase oven temperature to 400F.
  11. Bake an additional 20 minutes or until potatoes are tender.
