Fragrant Rice and Cashew Pilaf
- 1 1/2 cups brown basmati, Texmati, jasmine, wehani, or other specialty rice
- 2 tablespoons nonhydrogenated margarine or whipped butter
- 3 scallions, thinly sliced
- Juice of 1/2 lemon
- 1/3 cup toasted chopped cashew pieces
- Salt and freshly ground pepper to taste
- Bring 4 cups water to a simmer in a large saucepan.
- Stir in the rice, cover, and simmer gently until the water is absorbed, about 35 minutes.
- Stir the remaining ingredients into the rice, and serve.
