Bulgarian Meatball Soup Recipe

  1. *Note: Remove most of the seeds from the chiles.
  2. Combine beef, rice, paprika and savory.
  3. Season to taste with salt and pepper.
  4. Mix lightly but thoroughly.
  5. Form into 1-inch balls, then roll in flour.
  6. Combine water, bouillon cubes, 1 Tbsp.
  7. salt, 1 tsp.
  8. pepper, green onions, green pepper, carrots and tomatoes in large kettle.
  9. Cover, bring to boil, reduce heat and simmer 30 min.
  10. Add in meatballs, cover and bring to boil again.
  11. Reduce heat and simmer 20 min.
  12. Add in chiles and simmer, covered, 40 min or possibly till rice is cooked.
  13. Add in parsley during last 5 min of cooking time.
  14. Taste and add in more salt and pepper, if needed.
  15. Just before serving, beat egg with lemon juice.
  16. Stir 1 to 2 Tbsp.
  17. warm soup into egg mix, then stir egg mix into soup.
  18. Heat and stir till soup is thickened slightly, but don't allow to boil.
