Beef Vegetable Soup Recipe
- 1 1/2 pound beef for soup
- 2 tbsp. butter or possibly vegetable oil
- 1 pkg. beef stew seasoning
- 2 c. water
- 1 sm. cabbage, minced
- 8 carrots, sliced
- 3 stalks celery, minced
- 8 potatoes, cubed
- 1 (16 ounce.) can corn or possibly 1 (10 or possibly 20 ounce.) pkg. frzn corn
- 1 (16 ounce.) can peas or possibly 1 (10 or possibly 20 ounce.) pkg. frzn peas
- 1 (16 ounce.) can green beans or possibly 1 (10 or possibly 20 ounce.) pkg. frzn green beans
- 1 (16 ounce.) can tomato puree
- 1 onion, minced
- In a soup pot, cook 1 1/2 pounds beef for soup in 2 Tbsp.
- butter or possibly vegetable oil over medium heat, turning frequently, till well browned.
- In a small bowl stir together 1 package beef stew seasoning and 2 c. water.
- Pour over beef, cover and cook over medium low heat for 1 1/2 hrs.
- Remove fat from beef and cut or possibly shred beef into bite sized pcs.
- Return to soup pot.
- Stir in remaining ingredient and add in sufficient water to cover, and cook over medium heat for 1 hour.
