Easy and Delicious Italian Cheesecake

  1. Cream the cheeses together, add egg yolks, sugar, cognac and vanilla.
  2. Pour into prepared pie crusts .
  3. Bake at 375F (190C) for 30 minutes or until tester inserted in center comes out clean.
  4. Makes 2 pies.
  5. Note: Amaretto, frangelica or other liquiers may be substituted for the cognac.
