Chicken Spanish Rice Recipe

  1. Cook vegetables and rice in butter in a saucepan till onion begins to brown - about 4 min.
  2. Break up large pcs of tomatoes.
  3. Add in tomatoes and remaining ingredients to rice mix.
  4. Bring to a boil.
  5. Reduce heat, cover, and cook slowly till the rice is tender - about 25 min.
  6. Stir as needed to prevent sticking.
  7. Remove bay leaf.
  8. 2 servings of about 1 c. each.
