Delia's Rhubarb Torte
- 1 cup flour
- 12 cup melted butter
- 1 tablespoon sugar
- 1 dash salt
- 3 egg yolks, beaten
- 12 cup cream
- 2 tablespoons flour
- 1 14 cups sugar
- 18 teaspoon salt
- 12 cup frozen orange juice
- 2 12 cups diced rhubarb
- 3 egg whites
- 14 teaspoon cream of tartar
- 14 cup sugar
- Mix crust ingredients together and press into a greased 8x8" pan.
- Bake at 350 for 20 minutes.
- Mix filling ingredients together and pour over baked crust.
- Bake another 20-30 minutes or until thick and set.
- Mix meringue ingredients and whip until stiff peaks form.
- Spread over top of filling layer.
- Bake just until peaks are golden.
