Honeyed Rabbit Recipe

  1. Saute/fry onions, garlic and parsley in oil till onion is golden.
  2. Strain tomato pulp from juice and add in pulp and 1/2 tsp.
  3. salt to pan.
  4. Simmer 10 min.
  5. Fold in lowfat milk and honey.
  6. Dip rabbit in mix, then roll in flour seasoned with salt and pepper.
  7. Brown in oil.
  8. Cover with sauce and tomato juice and simmer about 1 1/2 hrs.
  9. Serves 3 or possibly 4.
