Honeyed Rabbit Recipe
- 1 rabbit, cut up
- 1 med. onion, sliced
- 1 clove garlic, fine minced
- 1 tbsp. parsley, minced
- 3 tbsp. veg. oil
- 3 1/2 c. tomato juice and pulp
- 1/2 teaspoon salt
- 1/4 c. lowfat milk
- 1/4 c. honey
- 1 c. sifted flour
- 1/4 teaspoon pepper
- 1 teaspoon salt
- 6 tbsp. veg. oil
- Saute/fry onions, garlic and parsley in oil till onion is golden.
- Strain tomato pulp from juice and add in pulp and 1/2 tsp.
- salt to pan.
- Simmer 10 min.
- Fold in lowfat milk and honey.
- Dip rabbit in mix, then roll in flour seasoned with salt and pepper.
- Brown in oil.
- Cover with sauce and tomato juice and simmer about 1 1/2 hrs.
- Serves 3 or possibly 4.
