Apple-dijon pork roast with potatoes

  1. place roast and water into slow cookery.
  2. in a small bowl, whisk together applesauce, juice and mustard; pour over roast.
  3. Cook on low setting for 8 hours.
  4. about 30 minutes before you're ready to serve the roast, scrub the red potatoes and cut into one inch cubes.
  5. Saute potatoes in oil over medium heat for about 15 minutes.
  6. stir in Italian seasoning, salt, and pepper.
  7. Cover and cook for about 10-15 minutes.
