Aubergines With Garlic and Parsley ( Serve Warm or Cold )
- 4 aubergines
- 4 tablespoons olive oil
- 2 -6 minced garlic cloves, . i like six but not the after effect
- 2 tablespoons flat leaf parsley (optional)
- salt & freshly ground black pepper
- Clean and slice aubergines 1/4 - 1/2 inch thick lengthwise.
- Sprinkle with salt, and let stand 15 minutes in a rice colander to drain if you think they might be bitter.
- Rinse aubergines and pat dry with kitchen paper.
- Salt and pepper the slices.
- Heat olive oil in skillet over med heatand brown each side 3 -4 minute.
- Turn heat very low and cook uncovered till soft.
- Top slices of aubergines with chopped or crushed garlic, and turn for garlic to brown (do not burn ) top the reverse side too with garlic , turn to brown, and let cook a few minutes,.
- Lastly add chopped parsley.
