Braised Chicken With Gratin Tomatoes

  1. Put rack in the middle of the oven.
  2. Preheat to broil.
  3. In a skillet, brown the chicken in oil.
  4. Add salt and pepper.
  5. Set aside on a plate.
  6. In the same skillet, brown the onion.
  7. Add more oil if needed.
  8. Add garlic and cook 1 minute.
  9. Deglaze with the wine and let reduce by half.
  10. Add tomatoes, honey and thyme.
  11. Bring to boil and let simmer about 5 minutes.
  12. Adjust seasonings.
  13. Add chicken and cover with the mixture of tomatoes.
  14. Sprinkle with cheese.
  15. Cook in the oven about 5 minutes until cheese is golden and chicken is cooked.
  16. Remove thyme sprigs.
  17. Serve on a bed of lentils.
