Turkey Tacos with Fresh Salsa
- 2 tsp (10 mL) vegetable oil
- 1 lb (500 g) ground turkey
- 3 tbsp (45 mL) finely chopped onion
- 1 tbsp (15 mL) chili powder
- 3 tomatoes, finely chopped
- 2 green onions, white parts only, finely chopped
- 1 small clove garlic, minced
- 2 tbsp (25 mL) finely chopped fresh Italian (flat-leaf) parsley
- Salt and freshly ground black pepper to taste
- 8 taco shells, warmed
- 2 cups (500 mL) shredded lettuce
- 1 cup (250 mL) shredded Monterey Jack cheese
- In a skillet, heat oil over medium-high heat.
- Saute turkey, onion and chili powder, breaking up turkey with a fork, until no pink remains.
- Make a mild salsa by combining tomatoes, green onions, garlic, parsley, salt and pepper.
- Fill warm taco shells with turkey mixture, lettuce, cheese and salsa.
