Gingery Pear-Apricot Pie

- 1/4 c. honey
- 2 lb. Bartlet pears
- 1 c. dried apricots
- 1/2 c. golden raisins
- 3 piece candied ginger
- 2 tsp. orange zest
- 2 tbsp. fresh orange juice
- 2 tbsp. cornstarch
- Lightly butter a 9-in pie dish.
- In a large bowl, combine the pears, apricots, raisins, and candied ginger.
- In a small bowl, whisk together the honey, zest, juice, and cornstarch.
- Drizzle over the pear mixture and toss to combine, then transfer to the prepared pie dish.
- Cover with desired topping (classic pie crust, crumb topping, or cobbler topping) and bake until the fruit is tender and the top is golden brown, 60 to 75 minutes.
