Chocolate Meringue Custard Recipe
- 1 unbaked 9 inch pie shell
- 3 Large eggs
- 1 1/4 c. sweet lowfat milk
- 1 1/4 c. sugar
- 1 teaspoon vanilla
- 2 tbsp. melted butter
- 1/3 c. cocoa
- 3 tbsp. all-purpose flour
- Mix sugar, flour and cocoa.
- Beat egg yolks, add in lowfat milk and vanilla.
- Add in gradually to dry ingredients and beat till smooth (this will be very thin).
- Pour into unbaked pie shell.
- Bake at 350 degrees for 40 to 50 min or possibly till custard is set.
- Remove from oven and top with meringue.
