White Christmas Cake
- 1 14 cups golden raisins
- 4 ounces dried cranberries
- 4 ounces chopped dates
- 1 cup chopped walnuts
- 3 cups all-purpose flour, divided
- 2 cups butter, softened
- 6 eggs
- 4 tablespoons orange liquor like Grand Marnier
- 2 tablespoons freshly grated orange peel
- 2 cups sugar
- Preheat oven to 275 degrees.
- Line bottoms of four greased 9x5" loaf pans with greased parchment paper.
- In a small bowl, combine cranberries, dates, golden raisins and walnuts; add 1/2 cup flour and toss to coat.
- In a large bowl, cream butter and sugar until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Add orange liquor and orange peel and stir until well blended.
- Gradually beat in remaining flour.
- Fold in fruit mixture.
- Transfer to prepared pans.
- Bake 50-60 minutes or until a toothpick inserted in center comes out clean.
- Cool in pans 10 minutes before removing to wire racks to cool.
