My Favorite Fried Potatoes
- 6 c. peeled and sliced potatoes
- 1 each diced bell peppers (green and red)
- 1/4 lb. diced bacon (slab)
- 2 c. sliced onions
- 1 c. sliced mushrooms
- 1 tsp. paprika
- 1 tsp. black pepper
- 1 tsp. garlic salt
- 1/4 c. or more vegetable oil
- Fry onions, bacon and mushrooms together, turning frequently until bacon is sufficiently cooked (not crispy).
- In a separate frypan, heat vegetable oil on medium-high temperature for 2 to 3 minutes.
- Season sliced potatoes with paprika, pepper and salt as listed in large bowl.
- Reduce temperature to low-medium; add sliced potatoes slowly to hot oil; turn potatoes frequently.
- Fry until light brown color is achieved.
- Combine all ingredients in one frypan and cook an extra 10 to 15 minutes and serve.
