Crustless Mexican Quiche

  2. Lightly coat a 9-inch pie plate with cooking spray; set aside.

  4. In a small skillet, cook chorizo until brown; drain off fat.
  5. Meanwhile, in a medium bowl stir together eggs and half-and-half; stir in cooked chorizo.
  6. Add cheese; mix well.
  7. Pour egg mixture into prepared pie plate.

  9. Bake in a 325 degree oven about 30 minutes or until a knife inserted near the center comes out clean.
  10. Let stand 10 minutes before serving.
  11. Top each serving with salsa.
