Gingered Gin and Tonic

  1. Combine first 3 ingredients in heavy small saucepan over medium heat.
  2. Stir until sugar dissolves.
  3. Increase heat and boil until reduced to 1 1/3 cups, about 3 minutes.
  4. Cool syrup; then strain.
  5. (Can be made 1 week ahead.
  6. Cover; chill.)
  7. Mix tonic water, gin, lime juice and 1/2 cup ginger syrup in glass measuring cup.
  8. Taste, adding more syrup, if desired (reserve remaining syrup for another use).
  9. Divide ice among 4 tall glasses.
  10. Pour gin-and-tonic mixture over.
  11. Garnish with fresh ginger slices and lime wedges, if desired.
