Black Bean Nacho Gratin Recipe

  1. Pre-heat oven to 400 degrees.
  2. Grease 12"X6" baking dish.
  3. Combine black beans, corn, bell pepper, zucchini and pepper.
  4. Spread half of the bean mix in a baking dish.
  5. Spoon 1/2 the salsa over the bean mix.
  6. Sprinkle with 1/2 crushed tortilla chips, then 1/2 the grated cheese.
  7. Repeat the layers with remaining bean mix, salsa, chips and cheese.
  8. Cover with foil.
  9. Bake till cheese is melted and vegetables are tender, about 20 min.
  10. Remove from the oven.
  11. Position rack 2"-3" from heat source.
  12. Pre-heat broiler.
  13. Remove foil.
  14. Broil till lightly browned, about 5 min Ready to serve in 35 min
