Lazy Cabbage Roll Casserole

  1. Scramble fry the ground beef with the onion until no longer pink.
  2. Spray a large casserole dish with cooking spray.
  3. Layer 2 cups of the cabbage, 1/2 cup of the rice followed by half the ground beef mixture.
  4. Repeat layers and top with remaining cabbage.
  5. Mix the tomato soup with the salt, water and 2 cups of the tomato juice.
  6. Pour over the top of the casserole.
  7. Add tomato juice as needed to just barely cover the casserole.
  8. Cover and bake at 325 degrees F for 2 hours or until the cabbage and rice are tender.
