Fresh Cucumber Sesame Pickle
- 1 small cucumber
- 5 spring onions
- 1 cup mint leaf
- 1 clove garlic
- 2 teaspoons ginger, grated
- 1 teaspoon salt
- 1 tablespoon lemon juice
- 1 teaspoon sugar
- 14 cup toasted sesame seeds
- 1 tablespoon oil
- 1 teaspoon sesame oil
- Peel cucumber and cut in half.
- Cut halves into quarters lengthwise.
- Cut each quarter into strip and cut strips finely.
- Wash and slice onions finely.
- Chop mint leaves.
- Crush garlic, peel and chop finely.
- Mix cucumber, onion, mint, ginger and garlic together with salt, lemon juice, sugar, sesame seeds and oils.
- Serve with cold meats, fish, or as a topping for crackers or with bread and cheese.
