Healthy and Chewy Okara Dumplings

  1. Lightly mix the fresh okara and katakuriko in a bowl.
  2. Add the boiling water and mix thoroughly.
  3. Add the carrot, enoki mushrooms, and the corn to the bowl from Step 1.
  4. Mix so that the ingredients are evenly distributed.
  5. Shape into balls 3 cm in diameter.
  6. Press to flatten slightly into 2-cm thick cakes.
  7. (No need to be too exact.)
  8. Heat the frying pan and coat it in a generous amount of oil (not listed in ingredients).
  9. Fry both sides of the dumplings.
  10. When both sides are nicely browned, cook the edges.
  11. Drizzle in the dashi soy sauce.
