Hot 'n' Sweet Bean Wraps
- 1 (19 ounce) can navy beans
- 3 green onions, chopped
- 2 stalks celery, chopped
- 13 cup roasted red pepper, chopped
- 14 cup light mayonnaise, type dressing
- 14 teaspoon salt
- 14 teaspoon ground black pepper
- 2 tablespoons McCormick mild chili seasoning (I use Clubhouse Sweet Chili & Peppers)
- 12 teaspoon sugar
- 12 teaspoon lemon juice
- 4 whole wheat tortillas
- Drain and rinse beans.
- Mash lightly in a bowl.
- Add remaining ingredients except tortillas.
- Mix well.
- Let sit for at least 30 minute.
- Serve on whole wheat tortillas with alfalfa sprouts or shredded lettuce.
- Add cheddar or Monteray Jack cheese if desired.
