Polenta with Tomato Sauce, Balsamic Onions and Feta
- 17 ounces, weight Tube Of Store-bought Polenta, Cut Into 1/2-inch Slices
- 1 Tablespoon Olive Oil
- 2 cloves Garlic, Minced
- 2 cups Thinly Sliced Onion
- 1 Tablespoon Balsamic Vinegar
- 8 teaspoons Store Bought Tomato Sauce
- 1/4 cups Feta Cheese, Crumbled
- 1 Tablespoon Chopped Fresh Chives
- Cooking Spray
- Warm up a skillet over medium heat.
- Lightly coat polenta slices with cooking spray.
- Add polenta slices into the skillet in a single layer and grill for about 5 minutes on each side or until lightly browned.
- Remove from heat.
- Warm up a large skillet over medium-high heat.
- Add olive oil and garlic.
- Saute for about 15 seconds.
- Add the onions and saute until onion begins to soften and become tender.
- Reduce heat to low and add balsamic vinegar; cook for about 3 minutes, stirring frequently.
- Plate the polenta.
- Layer tomato sauce, onion mixture, and feta evenly among polenta slices.
- Garnish with fresh chives.
