Polenta with Tomato Sauce, Balsamic Onions and Feta

  1. Warm up a skillet over medium heat.
  2. Lightly coat polenta slices with cooking spray.
  3. Add polenta slices into the skillet in a single layer and grill for about 5 minutes on each side or until lightly browned.
  4. Remove from heat.
  5. Warm up a large skillet over medium-high heat.
  6. Add olive oil and garlic.
  7. Saute for about 15 seconds.
  8. Add the onions and saute until onion begins to soften and become tender.
  9. Reduce heat to low and add balsamic vinegar; cook for about 3 minutes, stirring frequently.
  10. Plate the polenta.
  11. Layer tomato sauce, onion mixture, and feta evenly among polenta slices.
  12. Garnish with fresh chives.
