Cauliflower Ham Chowder

  1. In a saucepan, cook the potatoes, cauliflower and onion in chicken broth unti tender.
  2. Stir in milk, ham, salt, pepper and nutmeg.
  3. Heat through.
  4. Stir in potato flakes.
  5. Simmer for 5 to 10 minutes or until soup is as thick as desired.
  6. Sprinkle with parsley.
