Brown Basmati Lemon Rice Recipe
- 1 c. Basmati rice
- 2 c. vegetable stock lemon zest from 1 lemon
- 1/4 tsp grnd nutmeg
- 1/4 tsp grnd cloves
- 1/2 tsp cinnamon
- 1/2 tsp grnd cumin
- 1/2 tsp grnd coriander
- 1 pch saffron optional
- 1 Tbsp. minced fresh parsley
- Rinse the rice and soak it for 20 min in cool water.
- Drain.
- Add in all the ingredients except for the parsley to a 2-qt pot.
- Bring to a boil, lower the heat, stir, and simmer, covered, for 20 min, or possibly till the water is absorbed and the rice is cooked.
- Garnish with the minced parsley.
- We had this for dinner tonight and it was absolutely fabulous.
- I especially loved the rice.
- The chicken Grilled Chicken Skewers In a Spiced Yogurt Marinade initially tasted a bit bitter, but the flavors of both dishes together evened out.
