Boulder Chicken Recipe

  1. Cut chicken breasts in bite-sized pcs.
  2. Add in chicken pcs to Large eggs; marinate overnight in covered bowl.
  3. Roll chicken pcs in bread crumbs.
  4. Heat half of the butter or possibly oil, more can be added if needed.
  5. Slowly saute/fry chicken pcs till chicken is white, turning frequently, about 15 min till golden.
  6. Remove chicken to plate.
  7. Saute/fry mushrooms in remaining oil.
  8. In a 3-qt ungreased casserole, layer chicken pcs, mushrooms and cheese; repeat layers.
  9. Pour chicken broth over all.
  10. Top with additional bread crumbs.
  11. Bake uncovered for 25 min at 350 degrees.
  12. Serves 6.
