Tuna Steak Bruschetta
- 3 Tablespoons Extra Virgin Olive Oil
- 1- 1/2 pound Fresh Tuna Steaks
- 2 Tablespoons Grill Mates Seasoning
- 4 Tablespoons Butter
- 1 whole Small Red Onion (1/4 Inch Slices)
- 3 Tablespoons Honey
- 1 bunch Asparagus, Cut Into 4" Stalks
- 1/2 cups Orange Juice
- 2 cloves Garlic
- 6 slices Italian Or Boule Style Bread
- 8 ounces, weight Fontina Cheese, Shredded
- Heat the olive oil over medium heat
- Rub tuna with seasoning
- Place tuna in pan, cooking each side 3 minutes and then remove from pan
- Melt 2 Tbls butter in same pan and add sliced onion, drizzle with 1 Tbls honey and saute about 1 minute (until they start to caramelize)
- Add 2 Tbls butter and asparagus and drizzle with 2 Tbls honey, saute 1 more minute
- Add the orange juice and cover & simmer for 2 minutes.
- Place tuna back in pan, reduce heat to low and simmer uncovered 4 minutes, turning tuna once
- As the tuna is simmering, cut six slices of bread 1 inch thick, drizzle both sides with olive oil, rub with garlic and grill or toast each side
- Place bread on plate and cover with pieces of tuna, asparagus and onion, top with grated Fontina cheese, and drizzle about 1 or 2 tbls sauce from pan over top.
