Hawaiian Beef Dinner
- 2 lb. boneless beef chuck, cut in 1 1/2-inch cubes
- 1 (20 1/2 oz.) can crushed pineapple chunks
- 1 Tbsp. molasses
- 2 Tbsp. cornstarch
- 2 bananas, cut in chunks
- 2 Tbsp. honey
- 1/2 c. toasted coconut
- 1 tsp. ginger
- 1 Tbsp. fat (Crisco)
- 1 small onion, chopped
- 1 beef bouillon cube
- 1 c. vinegar
- 1 c. brown sugar
- 1 (9 oz.) pkg. frozen cut green beans, cooked and drained
- 1 tsp. salt
- 1 clove garlic
- In Dutch oven or heavy kettle, brown beef in fat.
- Add onion, salt, garlic and ginger. Drain pineapple and reserve syrup. Add enough water to syrup to make 1 1/2 cups. Add 1/2 cup to meat and bring to a boil.
- Cover and simmer 2 hours or until meat is tender.
