Simply Potato Cake Bruschetta #SP5

  1. Preheat oven to 425 degrees F.
  2. In a medium bowl, combine potatoes and beaten eggs.
  3. Using a tablespoon, spoon into 12 potato cakes on a non-stick cookie sheet.
  4. Bake at 425 degrees F. for 8 minutes.
  5. Remove from oven.
  6. Turn potato cakes.
  7. Return pan to oven and bake for 4 minutes.
  8. Remove from oven.
  9. Preheat oven to broil.
  10. Mound one tablespoon Parmesan cheese on each potato cake.
  11. Place under the broiler and broil for 3 minutes.
  12. Remove from oven.
  13. Cool on pan for 3 minutes.
  14. Place 2 basil leaves over the cheese on each potato cake, then top with diced tomatoes.
  15. Place on serving platter and enjoy!
