BLT Stuffed Tomatoes Appetizer

  1. Cut tomatoes in half and scoop out the guts.
  2. There are handy little tomato gadgets that will make this really easy, but I have used a grapefruit spoon and a melon baller before and it worked fine.
  3. A good pairing knife and some finesse will also do the trick.
  4. Dab inside of each tomato with a paper towel to dry it up inside then sprinkle each half with salt and pepper......dont be shy.
  5. Fill a Ziploc with sour cream and cut a corner to allow piping.
  6. Put a small dollop of sour cream inside each tomato.
  7. The only way these babies can go wrong is if you put too much sour cream inside each one.
  8. Youre looking for a small dollop that should only fill half the space you made.
  9. Then put a nice sized piece of bacon on top of the sour cream.
  10. ***HINT*** Buy the bacon at the salad bar area of your fancy grocery store.
  11. It will be already cooked and only cost you about .75 cents!
  12. If you dont have a fancy grocery store, move to the city.
  13. Then nestle a full leaf (or two) of the parsley next to the bacon.
  14. These can be refrigerated up to 12 hours ahead of time and then served.
  15. Make a ton of them!
  16. Each person can eat 5-6 if not more!
  17. No plates, no utensils required!
  18. Thats my kind of entertaining!
