BLT Stuffed Tomatoes Appetizer
- 20 pieces Cherry Tomatoes
- Salt
- Pepper
- 1 container Sour Cream
- 2 ounces, weight Cooked Bacon
- 1 bunch Italian Or Flat Leaf Parsley
- Cut tomatoes in half and scoop out the guts.
- There are handy little tomato gadgets that will make this really easy, but I have used a grapefruit spoon and a melon baller before and it worked fine.
- A good pairing knife and some finesse will also do the trick.
- Dab inside of each tomato with a paper towel to dry it up inside then sprinkle each half with salt and pepper......dont be shy.
- Fill a Ziploc with sour cream and cut a corner to allow piping.
- Put a small dollop of sour cream inside each tomato.
- The only way these babies can go wrong is if you put too much sour cream inside each one.
- Youre looking for a small dollop that should only fill half the space you made.
- Then put a nice sized piece of bacon on top of the sour cream.
- ***HINT*** Buy the bacon at the salad bar area of your fancy grocery store.
- It will be already cooked and only cost you about .75 cents!
- If you dont have a fancy grocery store, move to the city.
- Then nestle a full leaf (or two) of the parsley next to the bacon.
- These can be refrigerated up to 12 hours ahead of time and then served.
- Make a ton of them!
- Each person can eat 5-6 if not more!
- No plates, no utensils required!
