Broiled Shrimp With Mustard And Tarragon Recipe
- 1/3 c. Dijon mustard
- 3 Tbsp. Extra virgin olive oil
- 1 x Green onion, chopped
- 1 1/2 Tbsp. Chopped fresh tarragon
- 1 1/2 lb Uncooked large shrimp, (about 40), peeled, deveined
- 8 x Bamboo skewers, soaked in water 30 min, liquid removed
- Stir first 4 ingredients in medium bowl to blend.
- Add in shrimp; toss to coat.
- Chill at least 1 hour and up to 3 hrs.
- Preheat broiler.
- Line baking sheet with foil.
- Thread shrimp onto skewers.
- Sprinkle with salt and pepper.
- Broil till cooked through, 2 min per side.
- Remove shrimp from skewers.
- Arrange on platter.
- Serve with toothpicks.
- Makes 8 servings.
